Grilled fish (cha ca) is a favourite dish of Hanoi people. Hanoi now has several shops selling grilled fish, but no one of them can equal Cha ca La Vong in term of quality and flavour. Located in Cha Ca Street, Cha ca La Vong is the famous restaurant not only to Hanoians but also visitors from anywhere.
Domestic and foreign visitors to Hanoi are all fond of enjoying the gastronomic Cha ca La Vong (La Vong sliced grilled fish) at No 14 Cha Ca Street, a restaurant that only serves this one special dish. Mrs Ngo Thi Tinh, 80, the third generation daughter-in-law of The Doan family, who invented this dish 200 years ago, still treats her guests to th is excel lent dish.
The restaurant has no shop sign and there is only a statue of an old man sitting grasping his knees on the bank of the stream ready to fish. However, the name? "Chaca La Vong" has been well recognized all over the world as an especially delicious dish. The fishes, Hemibagrus (Lang fish) or Anh Vu fish, which were originally only offered to the feudal King have a good sweet tasting meat. The fish is firstly sliced into small pieces, then mixed with spices, following a secret traditional recipe, and then roasted over hot coals and enjoyed with an exquisite shrimp sauce and vegetables.
The beautiful old architecture of Cha Ca La Vong restaurant, with its narrow stairway and pair of vermilion lacquered and gilded wood panels inscribed with characters gives the house a peaceful happy atmosphere. It is a marvelous attraction and its beauty has been immortalized through modern Vietnamese poetry and literature.
While the guests sit down at the table, there will soon be a lay-out of some seasonings: a bowl of well-stirred shrimp paste sauce mixed up with lemon and a few drops of liquor to give it fragrance, and decorated by slices of red fresh pimento (chilli), a plate of roasted peanuts of gold yellow color, mint vegetables from Lang village; onions in small white slices with tuberose. Added to this is a plate of soft noodle in thin small and white threads. A few minutes later, fried fish, yellow in color and flagrant in smell, put on a plate of anethum vegetable is brought in. But that is not all. A few seconds more a cauldron of boiling fat is brought in and the waiter start pouring some boiling fat on each bowl of grilled fish, thus producing a flagrant smoke and sputtering noise. Further, some drops of coleopterous are dropped on the bowl giving it a special smell which is unforgettable to connoisseurs. Grilled fish are usually chosen from certain species of fish: mudfish or snake-head fish, etc. The fish must be carefully prepared before grilling. Galingale and saffron must be ground mixed with water and filtered through a piece of clean cloth in order to obtain a solution to which is added some drops of rice ferment and fish sauce of good quality. Then, the fish meat is immersed in this solution for two hours before grilling. Grilling must be done by means of pairs of bamboo tongs placed on a stove of burning charcoals. The fish meat must be grilled on oath sides and brought in to the guests when it is duly grilled.
The guests take their time slowly eating the fish and sipping some strong vodka to enjoy the special flavour and taste of the food. The sound of onion frying on the stove, the yellowness of the fish and the hot burning charcoal stove make you feel as if you were enjoying the essense and beauty of the nature. As a dish, La Vong grilled fish is indeed a remarkable culinary invention.
Cha Ca La Vong is indeed a very special dish and is perfect for those who want to sample the del ights of Hanoi.

Tet Doan Ngo
This is the middle year festival for the prevention of disease and ward off evil spirits (the day of changing weather from spring to summer, this is the time easy to get pathogen). On the day of killing insects, every one has to get up early, eat fermented sticky and fruits. The worshipping is held at noon, hour of Ngo.
Tet Doan Ngo, or Tet Giet Sau Bo (Killing the Inner Insect Festival) comes on the fifth day of the fifth lunar month every year. The fermented sticky rice “Insect Killing Wine” (Ruou nep) the main treat of the day, one that has some complex reference to an inner bug that needs exterminating.
To make the wine, the sticky rice is boiled and, after it cools, it is mixed with brewers yeast. Fermented for two or three days, it becomes a sweet, thick liquid.
It is believed that Ruou nep kills all off any parasites in the body. Adults and kids alike eat Ruou nep, but adults are more inclined to take its curing effects with a grain of salt. Nobody knows exactly why Vietnamese people have this habit, but it’s often said, “Old people think it’s a good idea”.
The myth behind
Old ladies still tell a tale of two snakes Thanh Xa (the Blue Snake) and Bach Xa (the White Snake) to trace back to the origin of Ruou nep.
A long time ago, there were two orphan brothers living together in a small village. They were popular among the locals for their intelligence and kindness.
Thanh Xa and Bach Xa were two snakes, which after long lives, turned into spirits. The snakes fell in love with the brothers and transformed themselves into beautiful ladies to charm the men.
The brothers soon were attracted to the snakes, and they soon became an extended family. Thanh Xa got married the older brother and Bach Xa the younger.
They live happily together, but the men grew unhealthy with each passing day, they grew scared of daylight and lived in festering darkness.
Locals suspected the presence of a bad spirit, and luckily one day, a Taoist hermit passed through the village. The locals told him of the men’s affliction, and he conducted some spirit type tests and confirmed that the men’s house had a case of the evils.
The hermit brewed a wine potion, and told the locals to feed it to the men. The brothers must eat the potion’s solids and liquids in the early morning of the next fifth day of the fifth lunar calendar.
As soon as the men tucked into their special breakfast, their wives were revealed as the snakes they were, before disappearing in a puff of smoke, freeing the brothers.
Since that day, people have eaten Ruou nep on Killing the Insect Day, in the hope of driving away bad spirits.
Popular dish
Making Ruou nep is not exactly difficult. But it is a process that takes time and some elbow grease.
Rice picked from a paddy just reaped is the best. It must be dried and pounded carefully to save the part of the rice richest in nutrients.
The rice is steamed for about 30 minutes and washed in cool water, before being steamed again to make it as soft as possible. It is then left a long time to cool. The cooler, the better, as it prevents any sour taste in the pudding.
The cooled rice is mixed with yeast, before being left for two or three days to ferment, depending on the weather.
Ruou nep fermentation and flavour kits include 13 medicinal herbs and rice flour. The most popular mixes hail from Bac Ninh Province, about 40km north of Hanoi.
Little to no research has been done on the potion’s curative effects, but the habit and a long-held trust in such potions still exist. People treat families and friends to the pudding at Tet Doan Ngo, as an observance more than a cure.

Phong Nha-Ke Bang national park
Viet Nam's Phong Nha-Ke Bang national park has been recognised as a world natural heritage site by the United Nations Educational, Scientific and Cultural Organisation (UNESCO) (15-02-2004) at its 27th general assembly session being held in Paris from June 30-July 5.
At the session, delegates from over 160 member countries of UNESCO World Heritage Convention agreed to include Phong Nha-Ke Bang park and 30 others worldwide to the list of world heritage sites.
Phong Nha-Ke Bang park is now the fifth UNESCO recognised site in Viet Nam after Ha Long Bay, the imperial city of Hue, the ancient quarter of Hoi An and the My Son historical site.
Phong Nha-Ke Bang National Park is located to the north of the majestic Truong Son mountain range amid limestone that is believed to date back 400 million years - the oldest in Asia. The more than 200,000 ha park includes beautiful limestone formations, grottoes and caves and forest covering of up to 95 per cent. It is considered a paradise for researchers and potholers or explorers of grottoes and caves. Vietnamese and British scientists have so far surveyed 20 grottoes and caves with total length of 70km.
Of these, 17 are in Phong Nha and three in Ke Bang.

According to initial statistics, the primitive tropical forest in Phong Nha-Ke Bang houses 140 families, 427 branches, and 751 species of high-rated plants, of which 36 species are endangered and listed in the Viet Nam Red Book. The forest is also home to 32 sets, 98 families, 256 races and 381 species of four land backboned animals. Sixty-six animal species are listed in the Viet Nam Red Book and 23 other species in the World Red Book. In general, Phong Nha-Ke Bang's animals are more diverse than in other natural reserves and national parks.
Phong Nha-Ke Bang also boasts dozens of mountain peaks of over 1,000 metres still unexplored by men and seen as ideal sites for activities like climbing and exploration. Worthy of note are Peak Co Rilata with the height of 1,128 m and Peak Co Preu, 1,213 m. Lying between these peaks are valleys which promise tourists exciting eco-tours.
In addition to the diversity in the ecosystem, Phong Nha-Ke Bang is home to archeological and historical relics such as an ancient hieroglyphic script of the Cham ethnic minority, King Ham Nghi's base built for the resistance war against French colonialists in the late 19th century, and the Xuan Son ferry station, Ho Chi Minh Trail and Road 20 used during the US resistance war.
Central Quang Binh province has poured heavy investment into upgrading the Phong Nha-Ke Bang visitor site to turn it into the country's major tourist destination.

Buoi Market
Located in Yen Thai Village, Buoi Ward, Tay Ho District, an area once famous for traditional crafts such as papermaking, silk weaving, malt cooking, mulberry growing, etc, the Buoi Market is one of a few markets in Hanoi retaining its tradition of special market days on the auspicious 4th and 9th days of each lunar month.
It was once the place where people from different craft villages gathered and exchanged their goods.
As described in ancient documents, the Buoi Market consisted of 15 stalls selling different kinds of paper made by villagers in the Ke Buoi area, including tissue paper from Yen Thai Village, inferior tissue paper from Ho Khau Village, litmus paper from Dong Xa Village and xe paper from Yen Hoa Village.
Also, many kinds of farming tools, such as ploughs, hoes, spades, etc., were also sold at the market to serve farmers in neighbouring areas. Other products, such as An Phu malt, Xuan Dinh confectionary, Vong green rice flakes, were available in the market.
Store owners from Hanoi often go to the market to buy products to resell in their shops. Candy made in Lu Village is a popular item. Children of all ages enjoy the tasty keo bot (flour candy), keo vung (sesame candy), keo lac (peanut candy), popcorn and rice crisps sold by an elderly lady with black teeth and wearing a triangular kerchief on her head.
Other goods can be found at the market, such as shrimp and fish from the Red River and West Lake, vegetables from many villages nearby the To Lich and Nhue Rivers and specialities from other parts of the country.
Probably the most sought after items on sale at the market are various kinds of fruit trees, flowers and ornamental
Plants from famous villages around the West Lake , like Yen Phu, Nghi Tam, Quang Ba, Nhat Tan, Tay Tuu and Phu Thuong.
On auspicious days, the number of seedlings is tenfold that of regular days. Therefore, one can find any seedling of beautiful flowers, such as rose, lily, climbing rose, jasmine, hibiscus, etc, fruit trees such as Xuan Dinh sapodilla, Canh orange, Dien grapefruit or even shade trees.
With its typical features, Buoi Maket is, indeed, an interesting place attracting a lot of Hanoians.
